Vegan Recipe Roundup- Thanksgiving Edition

Ah yes, one of America’s favorite holidays is back and the vast majority of us will celebrate by stuffing our faces. Lucky for you, I’ve scoured basically the entire internet to bring you a plethora of Thanksgiving dish ideas that taste amazing and won’t leave you in a paralyzing food coma. Keep in mind that even if you yourself aren’t gluten-free or vegan, one of your guests may very well be (after all it’s like #sohotrightnow). So whether you aren’t or you are in fact all of the above, these dishes are excellent options to bring/add in to your usual repertoire and will help balance out all the other crap you’re about to consume :). I also recommend not telling anyone they are vegan and see if they even notice. 10 situps says they don’t. 1. Baked Cashew Cheese cashew_cheese Looking for a good, easy, vegan friendly app? Look no further then this baked cashew cheese. I know what you’re thinking- “cashew cheese?!” You’re just gonna have to trust me on this one. I would go to great lengths to thank the host that made this for me (hint, hint). Serve with gluten-free crackers or toast and organic fruit spreads. T.D.F. 2. Carmelized Squash Salad with Pomegranate Vinaigrette Autumn-Arugula-Salad-with-Caramelized-Squash-Spiced-Pecans-and-Pomegranate-Ginger-Vinaigrette-6 As of late I’ve been making this caramelized squash salad for lunch and eating it every day. It’s easy, delicious, festive and versatile. Leave out the squash for a lighter side salad or add in some quinoa and serve as an entree. 3. Creamy Acorn Squash AKA THE BEST.SOUP.EVAR. photo-17 (2) This soup has been a major hit at my household and on the blog. It’s so rich, creamy and buttery I guarantee no one will guess it’s vegan or remotely healthy. Oh snap son, your guests just got punk’d! 4. Crispy Roasted Garlic Sprouts with Garlic Aoili mg_85481 Super addictive, like crack-style addictive. Serve as an appy or a side dish. Just be sure to sub vegenaise for regular mayo. Your guests will thank you, then demand another hit (er…serving). 5. Winter Fig & Buckwheat Salad with Roasted Sweet Potatoes and Citrus Dressing D6C_1649letters You can’t really go wrong with roasted sweet potatoe and grain salads, and this recipe is certainly no exception. Figs, pistachios, hints of maple syrup and citrus add loads of flavor. It’s also super hearty and filling, ensuring your fellow veg-heads don’t starve. 6.Butternut squash, Brussel Sprout and Bread Stuffing with Apples 11-18-2013 1-22-28 PM If you’re looking to up the WOW factor- this is your recipe. Make sure to buy gluten-free bread. 7. Ginger-Citrus-Maple Roasted  Beets and Apples- 12-beets_9999_74beets-roasted This would be nice atop some field greens and super balancing to other heavier dishes. Plus the beets will help detox your liver from all that alcohol you’re consuming…don’t pretend it’s not going down. 8. Root Vegetable Mash with Roasted Garlic- mashed rutabaga and squash If you love garlic mashed potaters (and let’s be real, who doesn’t?!) you will go cray cray over this dish. It’s also #vegan #glutenfree #paleo #canyousaycrowdpleaser?? 9.Roasted Garlic Green Beans with Lemon Windows-Live-Writer-Roasted-Garlic-and-Lemon-Green-Beans_E43F- This year, shelve that tired, mushy, calorie-laden green bean casserole and make THIS GUY instead. Just be sure to serve the parm on the side or try my brazilian- nut parmesan instead. 10.Pumpkin Risotto 11-18-2013 9-26-46 PM Name me a person that doesn’t like risotto and I’ll call them a bold faced liar! Okay maybe that’s taking it too far, but 60% of the time, people love it every time. 11.  Vegan Pumpkin Cheesecake 11-18-2013 9-22-18 PM Vegan.Pumpkin.Cheesecake……VEGAN.PUMPKIN.CHEESECAKE!!!!!!! 10. Black Bottom Pumpkin Pies with Whipped Coconut Cream Raw BB Pumpkin Pies Duo Disclaimer- exercising self control around this pie may be damn near impossible. Don’t say I didn’t warn you. 11. Spiced-Apple-Cider-Champagne-Cocktail 11-18-2013 9-48-22 PM Last but not least, you’re in need of a beverage to wash it all down the hatch. Cheers!
